Ouch

We had such a fun time last weekend hosting a few couples for a Texas Hold 'Em party ... a little too much fun maybe.  I rarely drink more than a glass of wine or a margarita here or there these days so I was definitely feeling my several drinks the next day.

We started the party at 8 so I didn't serve dinner but had a selection of chips and dips instead.  I bought most of the dips from the always fabulous Central Market, but I tried a new recipe for Caramelized Onion Dip that was amazingly addictive and very popular!

Caramelized Onion Dip
From Ina Garten and the Food Network

Ingredients
  • 1 tablespoon vegetable oil
  • 2 cups thinly sliced onion (I diced it just so the dip would be easier to scoop with chips)
  • 2 teaspoons chopped fresh sage leaves
  • 3/4 cup mayonnaise
  • 3/4 cup sour cream
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • I also added about 1/2 teaspoon of cayenne pepper just to give it a little kick
  • Potato Chips (I used the 'salt and pepper' variety)
Directions

Heat oil in heavy medium saucepan over medium-low heat. Add onions and sage. Cover and cook until onions are deep golden brown, stirring occasionally, about 20 minutes. Remove from heat and let cool.
 
Whisk together mayonnaise and sour cream in a medium bowl to blend. Stir in the cooled caramelized onions, salt, and pepper. Cover dip and refrigerate until flavors blend, about 2 hours.

  2. I must warn you it is completely addictive! I made it again for a Thanksgiving appetizer and I couldn't tear myself away from the bowl.
